GARLIC ROASTED VEGGIE CHICKEN

Ridiculously easy, roast chicken

Below you will find the easiest roasted chicken recipe to impress your friends with! All made within a 5qt dutch oven.

Ingredients:

  • One whole organic chicken

  • Four large shallots (or use onions if you need)

  • Four large carrots

  • Six celery stalks

  • 10 small gold potatoes

  • Two cups of Chicken broth

  • One tablespoons of Thyme

  • One tablespoon of oregano

  • Two stalks of Rosemary

  • Olive oil

  • Four heads of Garlic

  • Salt & Pepper to taste

How to:

  • Reheat oven to 420 degrees

  • Chop all vegetables into one inch pieces

  • Put a drizzle of oil in the bottom of the pan with the chicken broth

  • Chop garlic in half and place in the bottom of the dutch oven

  • Place all vegetables into the dutch oven

  • Pat the chicken dry with paper towels and then season semi heavily with salt and pepper

  • Place chicken on top of vegetables and sprinkle the herbs into the dutch oven

  • Place in oven for 45 minutes then spin the dutch oven and place in the oven for another 45 minutes or until done
